Pork Pineapple Hawaiian Recipe
- 1 1/2 lean pork tenderloin, cut in cubes
- 1 tbsp. shortening
- 1 teaspoon salt
- 1/3 c. water
- 1/2 c. brown sugar
- 3 tbsp. cornstarch
- 1/3 c. vinegar
- 1 pound can pineapple chunks, liquid removed (reserve 1/2 c. liquid)
- 1/4 c. soy sauce
- 1 green pepper, diced
- 1 green onion, sliced
- 1 (8 ounce.) can water chestnuts, liquid removed & sliced
- 2 tomatoes, cut up
- Rice or possibly Chinese noodles
- Brown meat in shortening.
- Season with salt.
- Add in water.
- Cover, simmer 40 min.
- Drain off fat, check while simmering.
- Combine sugar and cornstarch.
- Add in vinegar and pineapple liquid, soy sauce and blend well.
- Add in to meat, reduce heat and simmer about 5 min.
- Add in green pepper, onion, pineapple, chestnuts and tomatoes.
- Cook 3 min.
- Serve with rice or possibly noodles.
- Serves 6.
