Blender Pumpkin Pie Recipe
- 1 can (29 ounce.) solid pack pumpkin
- 2 packets Alba Fit n Frosty (vanilla)
- 2 packets unflavored Knox gelatin
- 1 teaspoon salt
- 2 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/2 teaspoon nutmeg
- 1/4 teaspoon cloves
- 4 packets of Equal
- 1/4 c. Jello instant pudding (vanilla)
- Mix Knox gelatin with 3 Tbsp.
- cool water.
- Let set 1 minute to get hard.
- Put everything in blender except pumpkin.
- Put in 1 1/3 c. boiling water.
- Turn blender on high.
- Spoon in pumpkin a little at a time.
- Mix thoroughly.
- Pour into baked pie shell.
- Counts: 2 vegetable, 1 lowfat milk.
