Baked Apples In Phyllo Pastry With Fruit Sauce Recipe
- 4 x whole golden brown delicious apples, cored
- 4 tsp cranberries, dry
- 4 tsp honey
- 1/2 tsp grnd cinnamon
- 1/2 c. apple juice, unsweetened
- 1 c. berries
- 1 c. assorted fruit
- 1 tsp lime juice
- 1 tsp candied ginger root, chopped
- 4 sprg fresh mint
- 4 x phyllo dough fresh berries For the Sauce
- 10 ounce berries
- 4 ounce water
- 1 tsp Splenda
- Preheat oven to 350 .Put dry cranberries in cored apples and set aside.
- Spray one sheet of phyllo with vegaline and cut in half horizontally.
- Lay one half over the other forming a cross.
- Place and apple in center of cross, sprinkle with cinnamon and drizzle with 1 tsp.
- of honey.
- Fold phyllo up over the top of the apple, completely enclosing the apple.
- Spray with vegaline and repeat with remaining phyllo and apples.
- Bake for 30 to 40 min till apples are soft when poked with a knife.
- To make sauce, combine fruit, juices and candied ginger in blender and puree till smooth.
- Add in more apple juice if needed.
- To serve, spoon sauce on plate and set phyllo covered apple on sauce.
- Garnish with mint sprig and cranberries.
- For the Sauce:Place frzn berries into a cooking pot.
- Add in water and Splenda and bring to a boil.
- Cook for 1 minute, remove from heat.
- In a blender, puree fruit mix till smooth.
- Return to pot and cold.
- Serves 6 - Makes approximately 12oz.
