Beef, Mushroom & Barley Soup
- 1 tbsp of olive oil
- 1 beef shortribs
- 1 lb of mushrooms, sliced
- 1 salt & pepper to taste
- 2 whole carrots cut in half
- 1 whole unpeeled large onion
- 2 ribs of celery, cut in half, with leaves on
- 1 tbsp fresh thyme
- 2 cup barley
- Heat olive oil in a stock pot, add beef brown on all sides.
- Season with salt & pepper.
- Add mushrooms, carrots, celery & onion, add broth, season with salt & pepper, add thyme.
- Bring to boil, then turn down heat to medium low.
- Cook until beef ribs are cooked.
- Add barley cook until tender.
- Reason with salt & pepper if needed.
- Enjoy.
