Beef, Mushroom & Barley Soup

  1. Heat olive oil in a stock pot, add beef brown on all sides.
  2. Season with salt & pepper.
  3. Add mushrooms, carrots, celery & onion, add broth, season with salt & pepper, add thyme.
  4. Bring to boil, then turn down heat to medium low.
  5. Cook until beef ribs are cooked.
  6. Add barley cook until tender.
  7. Reason with salt & pepper if needed.
  8. Enjoy.
