Apple-Cherry Brown Betty
- 1 c. all-purpose flour
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/8 tsp. salt
- 1/3 c. firmly packed brown sugar
- 1/2 c. vanilla low-fat yogurt
- 2 Tbsp. vegetable oil
- 2 Tbsp. unsweetened orange juice
- vegetable cooking spray
- 1 tsp. ground cinnamon
- 2 medium Granny Smith apples, peeled, cored and sliced
- 2 tsp. lemon juice
- 1 c. frozen dark sweet cherries, thawed
- 1/4 c. sugar
- 1/4 c. all-purpose flour
- 2 Tbsp. margarine, softened
- 2 Tbsp. fine dry bread crumbs
- 4 c. vanilla non-fat frozen yogurt
- Combine first 5 ingredients in a medium bowl; stir well. Combine low-fat yogurt, oil and orange juice; stir well.
- Add yogurt mixture to flour mixture and stir just until blended. Spoon into a 9-inch square baking dish coated with cooking spray; set aside.
- Combine apple slices and lemon juice; toss gently. Arrange apples and cherries over batter in pan; sprinkle with 1/4 cup sugar.
