Asian Glazed Salmon
- 1 lb salmon fillet, 1 inch thick
- 13 cup packed brown sugar
- 2 tablespoons soy sauce
- 1 tablespoon Dijon mustard
- 3 tablespoons rice vinegar
- Thaw fish, if frozen.
- If necessary, cut fish into 4 serving size pieces.
- Set aside.
- For glaze, in a small bowl combine brown sugar, soy and mustard.
- Set aside 2 tablespoons of the mixture for sauce.
- Preheat broiler.
- Place fish on the greased unheated rack of a broiler pan.
- Broil 4 inches from the heat 8-12 minutes or until the fish is cooked, turning once half way through broiling and brushing with glaze the last 2-3 minutes of broiling.
- For sauce, stir together rice vinegar and reserved glaze mixture until sugar is dissolved.
- Serve with salmon.
