Beef Steak, Chaliapin Style
- 3 steaks Beef rump steak
- 1 pinch Guerande Salt
- to taste Pepper
- 60 grams Grated onion
- 1 clove Grated garlic
- 1 tsp and 1 teaspoon Vegetable oil (for frying) 2, 110 grams Red pepper (small)
- 1 dash Guerande Salt
- 150 grams Sweet new harvest onion
- 10 grams Butter
- 1 1/2 tbsp Soy Sauce
- 1 1/2 tbsp Mirin
- 2 tbsp Sake
- 1/2 bunch Wasabi greens (75 g)
- Sprinkle the ingredients marked with over the steak, and place in a plastic bag.
- Add the ingredients marked with and mix together, then seal the bag and let sit for 30 minutes.
- Mince the new onion.
- Remove the stem and seeds from the red pepper, and cut into thin slices.
- Coat a skillet with oil, and lightly stir-fry the red peppers.
- Remove and sprinkle on salt.
- Add 1 teaspoon of oil to the skillet, and cook the meat.
- Remove the meat once both sides have browned.
- Add the butter and the other teaspoon of oil to the frying pan, and stir-fry the minced onion.
- Once the onions have browned, add the ingredients, and reduce by half.
- Place the wasabi greens on a plate, and arrange the red peppers with them.
- Place the beef steaks on top, and cover with the sauce from Step 4.
