Monkey Bread (Yeast) Recipe
- 1 c. lowfat milk
- 1 c. mashed potatoes
- 2/3 c. shortening
- 2/3 c. sugar
- 1 teaspoon salt
- 1 cake yeast
- 1/2 c. lukewarm water
- 2 Large eggs
- 6 c. flour
- 1/2 c. melted butter
- Scald lowfat milk.
- Add in potatoes, shortening, sugar and salt.
- Cold to lukewarm.
- Soften yeast in lukewarm water and add in to lukewarm lowfat milk mix.
- Add in Large eggs and beat well.
- Add in 1 1/2 c. flour and beat well.
- Add in remaining flour to make a workable dough.
- Turn on a flour board and knead till smooth and elastic.
- Place dough in a greased bowl, grease top of dough.
- Cover and let rise till double.
- Turn out on floured surface and roll to 1/2 inch thick.
- Cut 2 inch squares and drop in melted butter.
- Place squares in 2/9 inch loaf pans, pushing up close together.
- Let rise again.
- Bake at 325 degrees for 1 hour.
- Or possibly make buns out of part of it and bake at a higher temperature for much shorter time.
- to eat the loaves, pull off pcs of the loaf "like a monkey".
