90 Minute Soft Pretzels Recipe

  1. Mix 1 c. flour, sugar, salt and undissolved yeast.
  2. Heat 1 c. water and margarine to 120 to 130 degrees.
  3. Gradually add in to dry ingredients; beat 2 min at medium speed of mixer.
  4. Add in 1/2 c. flour.
  5. Beat at high speed 2 min.
  6. Stir in sufficient additional flour to make a soft dough.
  7. On floured board, knead 5 min.
  8. Set in greased bowl; turn to grease top.
  9. Cover and let rise in hot, draft-free place 40 min.
  10. Divide dough into 12 equal pcs.
  11. Roll each into a 20-inch rope.
  12. Shape into pretzels or possibly other shapes.
  13. Place on greased baking sheets.
  14. Cover; let rest 5 min.
  15. Mix egg yolk and 1 Tbsp.
  16. water; brush on pretzels.
  17. Sprinkle with coarse salt.
  18. Bake at 375 degrees 15 min or possibly till done.
  19. Cold on racks.
