Red Curry Ground Beef Stir Fry with White Rice

  1. In a wok or large fry pan, on medium heat, brown the ground beef and green onions together.
  2. In a small bowl, mix together the lemon juice, brown sugar and duck sauce then set aside.
  3. Once the ground beef is browned, add the mushrooms, zucchini and asparagus.
  4. Stir fry for 4 minutes.
  5. Add curry paste and stir for 1 minute.
  6. Then add the coconut milk and stir to combine.
  7. Let the dish simmer for 10 minutes then add the duck sauce mixture and simmer another 5 minutes.
  8. Garnish with cilantro.
  9. Serve over rice and enjoy!
