Red Curry Ground Beef Stir Fry with White Rice
- 1 pound Ground Beef
- 1 bunch Green Onions, Thinly Sliced
- 1 Tablespoon Lemon Juice
- 2 Tablespoons Brown Sugar
- 2 Tablespoons Duck Sauce
- 4 whole Large White Mushrooms Sliced (Or A 6.5 Oz. Can Of Sliced Mushrooms)
- 1 whole Small Zucchini, Cut In Half Longway And Sliced In Quarters
- 12 whole Aspargus, Ends Removed And Cut Into 2 Inch Pieces
- 1/4 cups Thai Red Curry Paste
- 1 can (14 Oz. Can) Coconut Milk
- 4 Tablespoons Chopped Cilantro
- In a wok or large fry pan, on medium heat, brown the ground beef and green onions together.
- In a small bowl, mix together the lemon juice, brown sugar and duck sauce then set aside.
- Once the ground beef is browned, add the mushrooms, zucchini and asparagus.
- Stir fry for 4 minutes.
- Add curry paste and stir for 1 minute.
- Then add the coconut milk and stir to combine.
- Let the dish simmer for 10 minutes then add the duck sauce mixture and simmer another 5 minutes.
- Garnish with cilantro.
- Serve over rice and enjoy!
