Flora's Southern Fried Squash and Zucchini
- 1 Zucchini
- 1 summer squash
- 2 eggs, beaten
- 1 cup corn meal
- 1 salt to taste
- 1 pepper to taste
- 1 cayenne to taste
- 3 cup vegetable oil
- in a deep skillet heat the oil on a med high heat
- chop your squash and zucchini into med thick slices depending on your tastw you may want them thinner.
- in a bowl beat the eggs, and place cornmeal on a plate for dipping.
- add the seasonings to the cornmeal and stir.
- Drop the veggies into the egg wash then into the cornmeal in batches.
- then place in the skillet not over crowding.
- brown on both sides.
- place on a paper towel to drain and dash with a lil more salt.
- enjoy!
- * note: ingredients can be adjusted depending on amount of veggies you are frying.
- * note: want to kick it up a notch....fry in bacon grease!
