Tomato Marrakesh

  1. Scoop the pulp from the tomatoes & chop.
  2. Heat the olive oil in a frying pan & fry the onion until softened.
  3. Add the pine nuts,garlic & cumin, fry for 1 min.Meanwhile prepare the couscous using the packets instruction.
  4. Remove from the heat, then add currants, coriander & the cooked couscous.
  5. Mix well.
  6. Spoon the mixture into the tomatoe shells & place on a baking sheet.Bake in a preheated oven at 180C/gas 4 for 15 minutes.
