Southwestern Simmered Beef

  1. Cut meat into 2" pieces.
  2. In a heavy 4 quart pot, brown meat in oil.
  3. Add onion and garlic;cook until soft.
  4. Sprinkle with flour; cook 2 minutes.
  5. Add remaining ingredients.
  6. Cover and simmer for 1 to 1 1/2 hours or more or until meat is tender.
  7. Stir occasionally and add additional water, if needed.
  8. To serve, garnish with a dollop of sour cream, if desired.
