Mandarin Mousse Mold
- 1 1/2 c. boiling water
- 1 package JELL-O gelatin
- 1 c. cold water
- 1 can mandarin orange segments
- 8 oz. Whipped topping
- Stir boiling water into gelatin in large bowl at least 2 minutes, until completely dissolved.
- Stir in cold water.
- Place orange segments in a 6-cup mold lightly coated with cooking spray; spoon 2 cups gelatin mixture into mold over oranges.
- Refrigerate about 30 minutes, or until set but not firm (it should stick to a finger).
- Meanwhile, refrigerate remaining gelatin mixture for 20 to 30 minutes, or until slightly thickened (to the consistency of unbeaten egg whites).
- Using a wire whisk, stir in two-thirds of the whipped topping until well blended.
- Pour over gelatin layer in mold.
- Refrigerate 4 hours, or until firm.
- Unmold, and serve with remaining whipped topping.
- Store leftover gelatin mold in refrigerator.
