King Trumpet & Shimeji Mushrooms Simmered in Sweet Soy Sauce
- 1 pack King Trumpet mushrooms
- 1 pack Shimeji mushrooms
- 3 tbsp Sugar
- 4 tbsp Mirin
- 4 tbsp Sake
- 4 tbsp Soy sauce
- Cut the king trumpet mushrooms into 5 mm thick pieces.
- Tear the shimeji mushrooms into small bunches.
- Place the mushrooms in the pressure cooker.
- Add the flavoring ingredients and mix.
- Cover Step 2 with a lid and turn on the heat.
- Once the pressure has lifted, lower the heat to low and pressurize.
- The pressure cooking time is approximate For a standard pressure cooker...about 3 minutes.
- For a high pressure cooker...about 1 minute.
- Once pressurized, stop the heat.
- When the pressure has been released, open the lid.
- Turn on the heat again without the lid and simmer for 3 minutes.
- Let cool and transfer to an airtight container.
- Store in the refrigerator.
