King Trumpet & Shimeji Mushrooms Simmered in Sweet Soy Sauce

  1. Cut the king trumpet mushrooms into 5 mm thick pieces.
  2. Tear the shimeji mushrooms into small bunches.
  3. Place the mushrooms in the pressure cooker.
  4. Add the flavoring ingredients and mix.
  5. Cover Step 2 with a lid and turn on the heat.
  6. Once the pressure has lifted, lower the heat to low and pressurize.
  7. The pressure cooking time is approximate For a standard pressure cooker...about 3 minutes.
  8. For a high pressure cooker...about 1 minute.
  9. Once pressurized, stop the heat.
  10. When the pressure has been released, open the lid.
  11. Turn on the heat again without the lid and simmer for 3 minutes.
  12. Let cool and transfer to an airtight container.
  13. Store in the refrigerator.
