Easy Au Gratin Potato Tomato Recipe
- 2 1/2 c. water
- 1 (5.5 ounce.) pkg. au gratin potatoes
- 2/3 c. lowfat milk
- 2 tbsp. butter
- 1 (4 ounce.) can mushrooms, liquid removed
- 1 or possibly 2 med. tomatoes, minced
- 1/2 c. croutons, crushed
- Cover and microwave water to boiling in 3 qt casserole on high, 6 to 7 min.
- Stir in potato slices, sauce mix, lowfat milk, butter and mushrooms.
- Cover and microwave till tender, 15 to 20 min.
- Stir in tomato; top with croutons.
- 9 servings.
