Pizza Potato Skin Luges

  1. Prick potatoes all over with a fork.
  2. Place on a baking sheet in a 400F oven for about 1 hour or until tender.
  3. Alternatively, cook in microwave on high for about 10 minutes.
  4. Let potato cool slightly until they can be handled.
  5. Using a serrated knife, cut each potato in half and scoop out some of the potato, leaving about 1/2-inch wall all around.
  6. Reserve the inside of the potato for another use.
  7. Plae potato halves onto parchment paper-lined baking sheet.
  8. Spread each with pizza sauce.
  9. Top with pepperoni and mushrooms, and sprinkle with cheese.
  10. Alternatively, drizzle with butter and top with bacon and sprinkle with Tex-Mex cheese.
  11. Place baking sheet in a 400F oven for about 20 minutes or until a golden and crisp.
  12. Sprinkle with with hot pepper rings or gren onion, if using.
