Holiday Apricot Bread Recipe
- 1/2 c. tightly packed dry apricots
- 1 lg. orange
- Boiling water
- 1/2 c. raisins
- 2 tbsp. butter
- 1 egg
- 1/2 c. pecans
- 2 c. flour
- 2 teaspoon baking pwdr
- 1/2 teaspoon soda
- 1/4 teaspoon salt
- 1 c. sugar
- Soak apricots covered in boiling water for 30 min.
- Wash orange, squeeze out juice; add in boiling water to make 1 c.. Save orange rinds.
- Put liquid removed apricots, cut up orange rind (cut away white portions if thick and raisins through food grinder twice - I use food processor).
- Cream butter, sugar, beat in egg.
- Add in nuts to fruit mix.
- Sift dry ingredients.
- Stir into fruit mix.
- Pour into greased and floured loaf pan.
- Bake at 350 degrees for 50 to 60 min.
