Breakfast Fritters (Bunuelos)

  1. Mix 2 Tbsp.
  2. of the sugar and the cinnamon; set aside.
  3. Place eggs, cornmeal, coconut, remaining 2 Tbsp.
  4. sugar and the baking powder in medium bowl; mix with hands until mixture is well blended and forms soft dough.
  5. Shape 1/4-cup portions of dough into 2-inch rounds with moistened hands.
  6. Poke hole in center of each with end of wooden spoon or finger.
  7. Heat oil in deep skillet on medium-high heat.
  8. Add the fritters, one at a time, to hot oil.
  9. Fry 3 min.
  10. or until golden brown on both sides, turning over once.
  11. Remove from oil with slotted spoon.
  12. Immediately add to sugar mixture; turn over to evenly coat both sides.
  13. Serve warm.
