Black Bean Soup

  1. Pour oil into large pot, then place all chopped vegetables in and saute about 5 minutes.
  2. Add remaining ingredients and boil for 5 minutes.
  3. Cover and simmer for 15 minutes.
  4. Uncover for 15 minutes.
  5. This can also be crockpotted!
