Baked Spareribs With Sauerkraut
- 1 12 quarts sauerkraut, canned
- 4 lbs spareribs
- 1 large onion, sliced
- 1 pinch salt
- 1 pinch pepper
- Preheat overn to 400 degrees.
- Place sauerkraut in a mound in the center of a small roasting pan.
- Season the spareribs lightly with salt and pepper, and fold them each in half.
- Between the folds, place slices of onion.
- Cover the sauerkraut with the folded ribs.
- Bake in the oven until they are browned, about 45 minutes.
- Baste frequently with juices (add water if necessary) and turn ribs over when brown.
- Reduce oven heat to 350 degrees and cook for 1 more hour.
