Low Fat Zucchini Bread
- 34 cup Egg Beaters egg substitute
- 2 cups raw zucchini, shredded
- 12 cup unsweetened applesauce
- 12 cup coconut oil (not solid)
- 1 cup sugar
- 2 cups flour
- 14 teaspooon baking powder
- 2 teaspoons baking soda
- 2 teaspoons vanilla
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 1 cup walnuts, chopped
- Put zucchini in strainer and press or squeeze with hands to get excess liquid out.
- Beat egg beaters, sugar, applesauce and oil together.
- Add flour, baking powder, soda, cinnamon, salt, vanilla, and nuts.
- Mix together by hand.
- Add zucchini (minus liquid).
- Beat mixture.
- Pour into 2 greased and floured loaf pans.
- Bake 45 minutes at 350F.
- Recipe may be doubled.
