Meatloaf with Brown Sugar Sauce
- 3 pounds Ground Chuck
- 3- 1/4 cups Packed Brown Sugar, Divided
- 2 whole Eggs
- 1 whole Bell Pepper
- 1 whole Medium Onion
- 1 Tablespoon Butter
- 1 can (29 Oz.) Tomato Sauce
- 30 whole Crackers, Crushed
- Chop onion and bell pepper.
- Cook in a skillet with 1 tablespoon butter until tender.
- In a mixing bowl, crumble meat.
- Add 1/4 cup brown sugar and 2 beaten eggs.
- Mix together.
- In a separate bowl, mix together tomato sauce with the remaining 3 cups brown sugar.
- Remove 1 cup of the sauce mixture to pour into the meat mixture.
- After onion and bell peppers are ready, add to the meat with the 1 cup brown sugar sauce mixture and 30 crushed crackers.
- Mix gently with hand.
- Form a loaf in a 9 x 13 pan.
- Then, use about 1/3 of the brown sugar sauce left to cover the meat.
- Cover with tin foil.
- Bake at 350 F for about 3 hours.
- After about 1/3 of the cooking time, drain fat from pan and add more brown sugar sauce.
- During the last hour, remove the foil cover and drain again.
- Add remaining brown sugar sauce.
- Cook until a glaze is formed.
