Meatloaf with Brown Sugar Sauce

  1. Chop onion and bell pepper.
  2. Cook in a skillet with 1 tablespoon butter until tender.
  3. In a mixing bowl, crumble meat.
  4. Add 1/4 cup brown sugar and 2 beaten eggs.
  5. Mix together.
  6. In a separate bowl, mix together tomato sauce with the remaining 3 cups brown sugar.
  7. Remove 1 cup of the sauce mixture to pour into the meat mixture.
  8. After onion and bell peppers are ready, add to the meat with the 1 cup brown sugar sauce mixture and 30 crushed crackers.
  9. Mix gently with hand.
  10. Form a loaf in a 9 x 13 pan.
  11. Then, use about 1/3 of the brown sugar sauce left to cover the meat.
  12. Cover with tin foil.
  13. Bake at 350 F for about 3 hours.
  14. After about 1/3 of the cooking time, drain fat from pan and add more brown sugar sauce.
  15. During the last hour, remove the foil cover and drain again.
  16. Add remaining brown sugar sauce.
  17. Cook until a glaze is formed.
