Club Wrap with Honey Dijon Sauce
- 2 slices Bacon
- 2 whole Tortilla Wraps (I Used Udi's Gluten Free)
- 1 Tablespoon Mayonnaise
- 2 teaspoons Honey
- 2 teaspoons Dijon Mustard
- 4 slices Deli Ham
- 2 slices Swiss Cheese
- 4 leaves Lettuce
- 4 slices Tomato
- 2 whole Eggs, Beaten
- Heat a medium size skillet on medium to medium low heat and cook the bacon until crisp, approximately 4 minutes on each side.
- Remove bacon from skillet and place on paper towels.
- Wipe the skillet clean and return to heat.
- Place each tortilla in the skillet for about 30 seconds, or until lightly browned.
- Place each tortilla on a plate.
- Combine the mayo, honey and Dijon in a small bowl.
- Top each tortilla with half each of the honey Dijon, ham, cooked bacon, cheese, lettuce and tomato slices, and set aside.
- Spray the skillet with cooking spray and carefully pour the beaten egg into the skillet.
- When the egg is set, flip, and let it cook an additional 20 seconds.
- Remove from heat and place eggs on the wraps.
- Carefully roll your wrap and slice down the center.
