Double Chocolate Cabernet Cherry Cookies
- 13 cup Smart Balance butter spread
- 12 cup brown sugar
- 12 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup flour
- 1 cup whole wheat flour
- 34 cup cocoa powder
- 1 teaspoon salt
- 1 teaspoon baking soda
- 7 ounces baking chocolate (63% cacoa)
- 12 cup dry red wine
- 23 cup dried cranberries (cherry flavored if possible)
- Preheat oven to 375.
- In a small bowl soak cranberries in wine for 5-10 minutes.
- In a large bowl, cream sugars and Smart Balance.
- Add egg and vanilla; beat well.
- Make a well in the center of the bowl and combine dry ingredients, then incorporate into sugar mixture.
- Fold in chocolate and cranberries.
- Drop in even tablespoons onto a greased cookie sheet.
- Bake 8-10 minutes then cool.
