Citrusy Orzo and Black Beans
- 2 cups cooked orzo
- 1 -2 garlic clove, sliced thinly
- 1 shallot, diced
- 12 red pepper, seeded and diced into roughly 1 inch chunks
- 12 green pepper, seeded and diced into roughly 1 inch chunks
- 1 -2 tablespoon olive oil
- 1 orange, juiced
- 14 cup chopped fresh oregano
- 18 teaspoon red pepper flakes
- 1 (15 1/2 ounce) can black beans, drained and rinsed
- Cook orzo as directed on package.
- Drain orzo, place in a medium bowl and set aside.
- Heat olive oil in a medium skillet over medium-high heat.
- When the oil is heated (about 2 minutes), add the garlic and shallot.
- Saute until tender and slightly browned, 5 minutes or so.
- Add the green and red peppers.
- Saute until tender-crisp.
- Remove from the heat and combine with the orzo.
- Mix well.
- Add the beans to the bowl and mix to combine.
- In a separate bowl, combine the orange juice, oregano and red pepper flakes.
- Stir well.
- Drizzle over the orzo and toss.
- Season with additional red pepper flakes if desired and a touch of salt.
