Citrusy Orzo and Black Beans

  1. Cook orzo as directed on package.
  2. Drain orzo, place in a medium bowl and set aside.
  3. Heat olive oil in a medium skillet over medium-high heat.
  4. When the oil is heated (about 2 minutes), add the garlic and shallot.
  5. Saute until tender and slightly browned, 5 minutes or so.
  6. Add the green and red peppers.
  7. Saute until tender-crisp.
  8. Remove from the heat and combine with the orzo.
  9. Mix well.
  10. Add the beans to the bowl and mix to combine.
  11. In a separate bowl, combine the orange juice, oregano and red pepper flakes.
  12. Stir well.
  13. Drizzle over the orzo and toss.
  14. Season with additional red pepper flakes if desired and a touch of salt.
