Bean Sprout And Cucumber Salad Recipe

  1. Cook bean sprouts in boiling salted water for 2 min.
  2. Drain and chill.
  3. Score unpeeled cucumbers by running the prongs of a fork down the side then cut into thin slices.
  4. Arrange cucumbers and sprouts on individual serving plates.
  5. In a small screw-top jar combine soy sauce, vinegar, sesame oil, sugar and dry mustard.
  6. Cover and shake well.
  7. Pour dressing on salad, and top with toasted sesame seeds.
