Pasta 'n' Potatoes

  1. Prepare pasta according to package directions, al dente style.
  2. Meanwhile, in a medium-sized pot, saute onion, garlic and chili flakes in olive oil until tender.
  3. Add oregano, potatoes and stock.
  4. Cook until potatoes are barely tender; add tomatoes.
  5. Continue cooking until potatoes are done.
  6. Remove half of the soup and puree with a hand blender.
  7. Pour back into the pot and cook for one minute.
  8. Adjust the thickness with extra stock if necessary.
  9. Add pasta and cheese; garnish with additional chopped oregano and, if desired, drizzle with olive oil before serving.
