Braised Chicken With Dried Chestnuts Recipe
- 1/2 x -(up to)
- 1 c. Dry chestnuts
- 1 x Spring chicken
- 2 x -(up to)
- 3 Tbsp. Oil
- 2 c. Water
- 2 slc Fresh ginger root
- 2 Tbsp. Soy sauce
- 2 Tbsp. Sherry
- 1/2 tsp Salt
- 1/2 tsp Sugar
- 1.
- Parboil dry clestnuts (see "Glossary of Chinese Ingredients").

- With a cleaver, chop chicken, bones and all, in 2-inch sections.
- 3.
- Heat oil in a heavy pan.
- Brown chicken sections quickly.
- Meanwhile bring water to a boil.
- 4.
- Mince ginger root; then combine with soy sauce, sherry, salt and sugar.
- Stir into pan with chickcn.
- Add in chestnuts and water; then simmer, covered, till done (about 45 min).
