Braised Chicken With Dried Chestnuts Recipe

  2. Parboil dry clestnuts (see "Glossary of Chinese Ingredients").

  4. With a cleaver, chop chicken, bones and all, in 2-inch sections.

  6. Heat oil in a heavy pan.
  7. Brown chicken sections quickly.
  8. Meanwhile bring water to a boil.

  10. Mince ginger root; then combine with soy sauce, sherry, salt and sugar.
  11. Stir into pan with chickcn.
  12. Add in chestnuts and water; then simmer, covered, till done (about 45 min).
