Yogurt Cake With Fruit Jam

  1. Preheat oven to 160C/320F.
  2. Lightly grease a loaf tin pan (may use a 9-inch cake pan or bundt pan too)
  3. Beat butter and sugar till pale and creamy.
  4. Add in vanilla essence followed by one egg at a time, beat till well combined.
  5. Fold in flour, alternate with yogurt till mixture is smooth.
  6. Pour half the batter into pan, spoon jam evenly.
  7. Top with remaining cake mixture.
  8. Bake for 45 minutes, or until tester inserted into cake comes out clean.
  9. Set aside to cool before serving.
  10. *may use any fruit jam of your choice ie.
  11. strawberry, marmalade, raspberry etc
