Apple And Chipotle Chutney Recipe
- 4 x Granny Smith apples
- 2 x Chipotle or possibly Jalapeno chilies
- 3 x Lemons, juiced
- 2 x Lemons, zest of
- 1 c. Water
- 1 c. Sugar
- 1 x Leek, white part only
- 1 Tbsp. Fresh mint, finely minced
- Cut apples into quarter-inch cubes and finely chop chipotle chiles.
- In bowl, mix apples, chilies, lemon juice, lemon zest, water and sugar.
- Marinate for 1 hour.
- Strain liquid and set aside apple mix.
- In a small saucepan, simmer strained liquid for 20 min over medium high heat.
- Slice leeks and add in to saucepan and simmer for another 10 min.
- Add in apple mix and simmer 20 min till a syrup forms and apples are tender.
- Remove from heat, add in fresh mint and allow to cold.
- Serves 8.
