Vegetarian Shepherd's Pie

  1. Prepare instant mashed potatoes according to package directions; set aside.
  2. In a large frypan add the oil, minced onions and carrots.
  3. Saute over medium heat until onions are translucent and carrots are soft.
  4. Add ground soy, frozen peas, salt and pepper to taste, and thyme.
  5. Combine until heated through.
  6. In a medium casserole dish transfer in the soy mixture.
  7. Top with creamed corn and spoon and spread mashed potatoes over the top.
  8. Place in a preheated 350F oven for 45 minutes
  9. Serve and enjoy!
