Sweet-And Sour Red Cabbage
- 5 cups shredded red cabbage
- 2 cups water
- 4 slices bacon
- 2 tablespoons brown sugar
- 1 tablespoon all-purpose flour
- 1 14 cups red wine vinegar
- 13 cup water
- 1 small onion, thinly sliced and separated into rings
- 1 small apple, chopped
- 12 teaspoon salt
- 18 teaspoon pepper
- Place cabbage and 2 cups water in a saucepan.
- Bring to a boil over medium-high heat, cover, reduce heat, and simmer 5 to 8 minutes or until crisp tender.
- Drain; set maside.
- Cook bacon in a skillet until crisp.
- Drain bacon on paper towels, reserving 1 tbls.
- drippings in skillet.
- Crumble bacon; set aside.
- Add brown sugar and flour to drippings in skillet; stir until smooth.
- Gradually add vinegar and 1/3 cup water, stirring until smooth.
- Add onion and remaining ingredients; cook 5 minutes or until slightly thickened; stirring frequently.
- Stir in cabbage and bacon.
- Cool.
