Easy Skillet Breakfast

  1. Heat oil in large nonstick skillet on medium-high heat.
  2. Add potatoes and franks; cook 5 min.
  3. or until potatoes are browned, stirring occasionally.
  4. Beat eggs, milk and mustard with whisk until well blended; pour over potato mixture.
  5. Cover; cook on low heat 8 min.
  6. or until center is set.
  7. Top with cheese; cook, covered, 1 to 2 min.
  8. or until melted.
