Apple Grunt
- 1/4 cup butter
- 4 Granny Smith apples, peeled, cored, and sliced
- 1/2 cup brown sugar, firmly packed
- Pinch nutmeg
- 1/4 teaspoon ground cinnamon
- 1/2 cup raisins
- 1/4 cup apple juice
- 1 tablespoon cornstarch
- 1 tablespoon water
- 3 ounces crushed granola
- 4 scoops vanilla ice cream
- 4 dollops whipped cream
- 4 maraschino cherries
- In a medium pan, melt the butter over medium heat.
- Add the apples and cook until browned.
- Add the brown sugar, nutmeg, cinnamon, raisins, and the apple juice and bring to a simmer.
- In a small bowl, combine the cornstarch and water and stir until the cornstarch is dissolved.
- Add the cornstarch slurry to the pan and bring to a simmer again.
- Cook while stirring until thickened, about 5 minutes.
- Divide the mixture among 4 serving bowls.
- Top each bowl with crushed granola, a scoop of ice cream, a dollop of whipped cream, and a cherry.
- Serve immediately.
- Cook's Note: This dish is better when the apple mixture is cooked 1 day in advance.
