Oven Roasted Vegetarian Stew
- 2 lbs potatoes
- 1 lb carrot
- 12 lb celery
- 12 lb onion
- 3 fat free brown gravy mix
- Spray a large roasting pan with non-stick cooking spray.
- Scrub, but do not peel potatoes, carrots, celery.
- Cut into bite sized pieces.
- Add to pan.
- Peel and quarter onions.
- Add to pan.
- Roast at 400 degrees for 1 hour, checking and turning at 15 minute intervals.
- Transfer roasted vegetable to serving dish.
- Prepare gravy mix per package directions, pour over veggies.
