Oven Roasted Vegetarian Stew

  1. Spray a large roasting pan with non-stick cooking spray.
  2. Scrub, but do not peel potatoes, carrots, celery.
  3. Cut into bite sized pieces.
  4. Add to pan.
  5. Peel and quarter onions.
  6. Add to pan.
  7. Roast at 400 degrees for 1 hour, checking and turning at 15 minute intervals.
  8. Transfer roasted vegetable to serving dish.
  9. Prepare gravy mix per package directions, pour over veggies.
