Sopa De Arroz (Mexican Rice)
- 1 cup Cooking Oil
- 2 cup Rice
- 4 cup hot water
- 1 can tomato sauce (small can)
- 1 can corn
- 2 tbsp Chicken flavor Bouillon
- Heat the 1 cup of oil in pot on medium heat.
- Then add rice and cook, stir occasionally so rice won't burn.
- Bring rice to a brown color.
- When rice is browned, remove from heat.
- Let cool about 5-7 mins.
- Add in can of tomato sauce, stir.
- Bring to heat again on medium to low heat, immediately add water & corn.
- Stir and add Chicken flavor Bouillon and stir.
- Cover with lid.
- Bring to a boil.
- Lower heat when water begins to dissolve and let cook on low heat for about 10 mins & stir so rice won't stick or burn.
- Turn stove off and serve as desired.
