Barbecued Chicken
- 4 Tablespoons Tomato Ketchup
- 2 Tablespoons Maple Syrup
- 3 cloves Garlic
- 1 whole Red Onion
- 2 Tablespoons Olive Oil
- 2 teaspoons Salt
- 2 teaspoons Pepper
- 2 teaspoons Chicken Seasoning
- 1 Tablespoon Mustard
- 4 whole Jalapeno Chilies
- 1 bunch Cilantro
- 1 whole Chicken, Butterflied
- In a food processor, blend all the ingredients together, except the chicken.
- Rub into the chicken and marinate overnight.
- To cook, preheat the oven to 300F, cover with foil and roast for 30 minutes.
- Itll cook partially and not colour.
- Transfer to a hot barbecue to finish off cooking, about 10 minutes on each side.
- Goes well with potato salads, green salad, etc.
