Very Strawberry Cheesecake Recipe
- 1 1/2 c. vanilla wafer crumbs
- 1/4 c. butter, melted
- 1 env. unflavored gelatin
- 1/4 c. cool water
- 2 (8 ounce.) Packages cream cheese, softened
- 1 tbsp. lemon juice
- 1 teaspoon grated lemon peel
- 1 (7 ounce.) jar marshmallow creme
- 1 (8 ounce.) container whipped topping, thawed
- 2 c. fresh sliced strawberries
- Combine crumbs and butter; press onto bottom of 9-inch springform pan.
- Chill.
- Soften gelatin in water; stir over low heat till dissolved.
- Gradually add in gelatin to cream cheese, mixing at medium speed till well blended.
- Blend in juice and peel.
- Beat in marshmallow creme, mix in whipped topping.
- Puree strawberries; fold into cream cheese mix.
- Pour over crust.
- Refrigeratetill hard.
