Wonderful Bread Salad
- 3 tomatoes, diced (i do a larger dice here)
- 12 cucumbers, seedless, diced with skin on or 12 English cucumber
- 3 -4 garlic cloves, minced
- 14 cup fresh basil, chopped
- 14 cup fresh parsley (good) (optional)
- 13 cup extra virgin olive oil
- 3 tablespoons red wine vinegar
- salt
- pepper
- 12 cup fresh mozzarella cheese, diced (or more)
- 5 cups bread, diced (dense, hearty bread like sourdough)
- combine tomatoes, cucumber, garlic, and herbs in a large bowl.
- whisk together oil and vinegar, add salt and pepper to taste.
- pour the oil/vinegar mixture over the veggies and let them sit at room temperature for about 15 minutes.
- stir them well and add mozzarella and bread.
- refrigerate for at least 30 minutes before serving.
