Roasted Veggies, Sausage and Pasta
- 1 large onion
- 2 red peppers
- 1 medium zucchini
- 1 large tomatoes
- 3 minced garlic cloves
- 18 cup olive oil
- 14 teaspoon salt (to taste)
- 14 teaspoon fresh ground pepper (to taste)
- 4 hot Italian sausages (large)
- 12 cup red wine
- 14 cup parmesan cheese
- 300 g rotini pasta (or any pasta)
- Preheat oven to 350 Fahrenheit.
- Cut the onion, red peppers, zucchini and tomato into chunks.
- Mince garlic.
- Place veggies and garlic in a large baking dish (glass or metal is fine) and drizzle with olive oil.
- Sprinkle with salt and pepper to taste.
- Cut uncooked hot Italian sausages into chunks and place in baking dish with veggies, toss well.
- Bake @ 350 for 30 minutes uncovered, toss occasionally.
- Add red wine and bake for 15- 20 more minutes.
- Cook pasta according to directions on the box.
- Toss pasta with veggies and sausage.
- Serve with sprinkled parmesan on top.
