Fig Bars
- 1/2 cup butter or margarine,softened
- 1 cup brown sugar packed
- 3 large eggs large
- 1 teaspoon lemon zest grated
- 1 teaspoon vanilla extract
- 1 cup flour, unbleached all-purpose
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups figs dried, finely chopped
- Cream butter and sugar.
- Add eggs, peel and vanilla, beat well.
- Stir together flour, baking powder, and salt; blend into creamed mixture.
- Stir in figs.
- Pour into greased 13x9x2 inch baking pan.
- Bake at 350F (180C) F for 25 minutes.
- Cool; cut into bars.
