Chicken Lime Soup

  1. Mix tomatoes, onion, chili peppers, garlic, oregano and bay leaf in 4-quart saucepot.
  2. Cook on medium-high heat 10 minutes, stirring occasionally.
  3. Add chicken, chicken broth and lime juice.
  4. Bring to boil.
  5. Reduce heat to medium-low; simmer 30 minutes.
  6. Remove bay leaf; discard.
  7. Season soup with salt and black pepper to taste.
  8. Serve in soup bowls topped with cheese and cilantro.
