Mammaw's Chicken Casserole
- 3 chicken breasts (skinless and boneless)
- 1 cup uncooked macaroni
- 1 (10 ounce) can cream of mushroom soup
- 2 (10 ounce) cans cream of chicken soup
- 8 ounces sour cream
- 10 ounces shredded cheddar cheese
- 1 (15 ounce) candrained peas
- 1 (15 ounce) candrained corn
- Preheat oven to 350 degrees.
- Boil chicken in water, cool, and cube.
- Cook macaroni according to the package, (until tender).
- Crumble Ritz Crackers in the bottom of your pan(s).
- ( I like to leave big chunks).
- Mix soups and sour cream in a large bowl.
- Add in chicken, macaroni, peas, corn, and 1/2 package of cheese.
- Pour into cracker lined pans.
- Bake for aprox 20-30 min until mixture boils
- Remove and cover with remaining cheese.
- Return to oven until cheese is melted.
- Remove again, cool 5 min, serve.
