Chicken and Black Bean Wraps
- 15 ounces, weight Can Black Beans, Drained
- 1/2 teaspoons Ground Cumin
- 18 cups Fresh Cilantro, Chopped
- 3 Tablespoons Fresh Lime Juice
- 1/4 teaspoons Salt
- 4 whole Flour Tortillas (8-inch Size)
- 12 ounces, weight Grilled Chicken Breast, Cubed Or Shredded
- 1/2 cups Shredded Colby-jack Cheese
- In a saucepan, combine beans, cumin, cilantro, lime juice, and salt.
- Heat over medium heat until warm.
- Warm tortillas for a few seconds in the microwave or in a skillet on medium heat, just until flexible.
- Spoon equal amounts of bean mixture, chicken and cheese down the center of each tortilla.
- Roll up and cut in half.
