Plum Oatmeal Bread Recipe
- 1 c. minced, pitted plums (5 or possibly 6 Italian prune plums or possibly 3 lg. plums)
- 2 c. sifted flour
- 3 teaspoon baking pwdr
- 1/2 teaspoon baking soda
- 3/4 c. sugar
- 1 c. quick cooking rolled oats
- 2 Large eggs, beaten
- 1 c. nuts, minced, optional
- 1/4 c. vegetable oil
- 1 c. lowfat milk
- Prepare plums and set aside.
- Sift or possibly stir flour, baking pwdr, soda and sugar into bowl.
- Stir in oats.
- Combine Large eggs, oil and lowfat milk.
- Add in to dry ingredients, stirring just sufficient to moisten.
- Stir in plums and nuts.
- Pour into greased 9x5x3 inch loaf pan or possibly 3 mini pans.
- Bake at 350 degrees for 1 hour, little less for mini pans.
- Cold in pan for 10 min.
- Remove to cooling rack.
- Stores and freezes well.
- Slices best on second day.
