Prune Chutney Recipe
- 2 lb 4 oz prunes, pitted
- 1 onion, diced
- 2 1/2 cups wine vinegar
- 1 tbsp salt
- 1 tsp ground ginger
- 2 oz mustard seeds
- 1 tsp Cayenne pepper
- 2 tsp allspice
- 2 cups sugar
- Put the prunes, onion, salt, and spices in a large pan and add two thirds of the vinegar.
- Bring to boiling point and simmer over low heat for 30 minutes.
- Add the remaining vinegar and the sugar and reduce until the mixture becomes a thick puree.
