Cobb salad
- 8 oz skinless,boneless chicken breast
- 1 tsp olive oil
- 1/2 tsp blackened redfish magic seasoning
- 5 cup chopped romaine lettuce
- 3/4 cup crumbled blue cheese
- 4 slice hickory smoked bacon
- 2 hard boiled eggs,halved
- 1/2 slice avocado
- 1 cup chopped vine ripe tomotatoes
- 1/2 cup greek vinaigrette dressing
- preheat grill on high, rub the chicken breast with olive oil and seasoning, then place on the hot grill.
- Lower heat to med high and cook, covered,for 10min or until no longer pink in the center turning once.
- remove chicken from grill and let rest for 10min before slicing.
- divide lettuce, cheese, bacon, eggs, avacado and tomatoes between two plates.
- Top with warm chicken slices.
- Drizzle 1/4 cup of the dressing over each salad.
