Pumpkin compote
- 600 grams fresh pumpkin ,chop to large pieces
- 1/3 cup each palm sugar and molasses or brown sugar
- 1 1/2 cup water
- 1/2 cup coconut milk
- 1 tbsp sugar
- 1/4 tsp salt
- 1/3 tbsp ap flour to thicken
- Add water,molasses to pan,stir to mix on low heat,add pumpkin ,close lid ,let it simmer for 20 mins ,or until pumpkin soft ,liquid almost dried ,flip pumpkin softly on half way
- Make coconut topping ,mix all ingredients ,stir on medium heat until almost thick sauce
- Pumpkin is ready to serve,top with cream coconut ,garnish and serve
