Corned Beef and Onions
- 1 tsp. olive oil
- 1 can corned beef
- 1 sm. can tomato sauce
- 1 md. onion, sliced
- 1 cup white rice
- Cook rice as directed on package - usually 20 minutes.
- While rice cooks, slice onion and sautee in a teaspoon of olive oil until soft.
- Add corned beef, breaking it into smaller pieces with a fork.
- Add can of tomato sauce, cover and cook over low flame for 5 minutes.
- Serve corned beef and onions over hot cooked rice.
